Leek and prawn quiche

Last 3 weeks we had a bbq pot luck party...leek and prawn quiche from rina won the menu for the day...hehe here is the recipe....


Dough.
1 1/4 cup plain flour
90 gm butter, chopped
2-3 tablespoon ice water
2 tablespoon milk
...
Filling
1 cup diced prawns
1 medium leek (thinly sliced)
Capsicum (diced)
Scallions (chopped)
200 ml Half and half cream (regular cream would suffice)
Some milk
3-4 eggs
1 tablespoon butter
salt and pepper to taste
Cheddar

To make pastry dough:
1. Cut butter into small cubes and sprinkle over flour.
2. quickly rub the butter into the flour using finger tips until it resembles fine breadcrumbs.
3. Next, slowly add iced water and milk a teaspoon at a time and gent...ly mix until mixture comes together. Form into a ball.

Baking using "baking blind method:
Baking blind method is basically baking the pastry without any filling.
1. Cut a sheet of greaseproof paper and put on top of the pastry lined tin. Add rice grains/beans as weight to avoid from the dough rising.
2.Bake at 190 for 10 minutes. Then remove the greaseproof paper. Bake for another 10 minutes or till pastry is golden brown.

Chill the pastry dough first for 20 minutes before baking. Cover with plastic wrap. :)


1. Melt butter and add in chopped prawns. Add in the leeks. Cook until leek soften.
2. Add the chopped capsicum.
3. If filling is too watery, add some flour to thicken. Add in salt and pepper.
...
4. In large bowl, whisk the eggs until fluffy.
5. Add in cream, and milk (adjust accordingly)
6. Add in chopped scallions, salt and pepper.

7. Put the filling into the baked pastry shell. Add in eggs and cream mixture. Sprinkle with cheese.
8. Bake at 190 (adjust heat accordingly as different oven gives different result) for 20 minutes.
